rakkestad!

hey! i've been a little MIA... but with good reason! i just finished my last term paper for my Development Aid & Politics class, so it's pretty much clear sailing from here til exams!!! =) hehe... and of course, lots of fun times squeezed in... or rather, more like work squeezed in between fun times!! i really need to make crazy fun more of a regular habit back in vancouver!! =D

ill share some pictures from random things maybe next time, but here's some highlights from sunday, when debbie, laurent, sego, ingvil, helge & i went with john fredrik back to his parent's place in Rakkestad, about an hour from Ås, where he grew up! they live right on norway's longest river... ANDDD they have a boat... so we spent a beauuutiful day down by the river hanging out...

joffe (john fredrik)'s still out-of-commission with a broken back... but he was our trusty (& patient!!) boat driver for the whole day!! he's doing super well by the way... & thanks you all for your prayers. & there's laurent in the pic behind joffe, getting up on his first day ever of wakeboarding!

good friends & good fun - not much more a girl could ask for!! =)



and tomorrow we're going to go home with tor arne, my other cool norwegian friend, to his parent's place, so that'll be fun too =) !! talk soon!!

actually, i'll add a little bonus feature here from tonight - my italian roommate, chiara, and i got this idea to have a Carbonara Cook-off since my canadian understanding of "carbonara" pasta apparently is nothing like the real italian carbonara, which is just eggs, parmasen and bacon! so we decided to make a night of it, and invite everyone to make THEIR version of carbonara and have dinner together...

and it was super fun, but it was *almost* a disaster in every way!! of course i didnt tell anyone about it til today, so all these people were going to come and make food and had no ingredients and hte stores were closed today for may 1st (norwegian labour day)... but i told 'em all to come anyways and i'd make more pasta... and 15 minutes before everyone's supposed to arrive, i go to start cooking and realize i'd invited everyone over for pasta and I didnt even have any pasta at home!! oops!!! haha... luckily laurent had some i could borrow. and then i went to make cinnamon buns to make up for my lack of pasta, but i was about to start and realized i didnt have any brown sugar either so i couldnt! so my roommate nikki got a box of cupcake mix and im there reading the instructions in norwegian and i tell her to put in 1.5 litres of water, but really it was supposed to be 1.5 dl (decilitres??!)... so we dumped all this extra flour and sugar & eggs in and made 10 times as much cake mix as we orginally planned... (ie, enough for 200 cupcakes, instead of 20!) it was hilarious, but it worked out & we had a big cake enough for everyone to have their fill!! hehe like they say... and that's the way the cookie crumbles! til next time.. =) !!
